Recipe - Muesli with Apple & Sultanas

Ingredients - Serves 4

  • 175g mixture of oats, millet flakes and rye flakes
  • 2 tablespoons/30ml of sultanas
  • 2 tablespoons/30ml honey
  • 2 tablespoons/30ml lemon juice
  • 2 apples grated
  • (optional) 1 chopped banana

Method

In a large bowl, mix together the oats, milk, sultanas and ground seeds. Cover and leave for at least 2 hours, ideally leave in the fridge overnight.

Stir in the honey, lemon juice and grated apple and then serve.

Note: you may substitute the milk for natural bio-yoghurt and stir in 3-4 tablespoons just before serving.

Health Facts

Oat and rye flakes are rich in soluble fibre, good for
regulating blood sugar and insulin levels and reducing cholesterol. They also supply B vitamins, iron and magnesium.
