Recipe - Three Bean Soup
Ingredients - Serves 4
- 1 onion
- 1 clove garlic, crushed
- 1 teaspoon of olive oil
- 1 can chopped tomatoes
- 1 410g can mixed beans
- 1 teaspoon dried oregano
- 250 ml of vegetable stock
Method
Chop the onion and fry in the teaspoon of oil until soft
Chop the celery into small pieces and cook for 2-3 minutes
Add the crushed garlic and stir
Add the can of chopped tomatoes to the pan and simmer for 5
minutes
Add the vegetable stock and oregano, cook for a further 5
minutes.
Put the can of mixed beans in a sieve and run under
water to rinse
Add the beans to the pan and simmer for a further 5- 10 minutes
to warm the beans.
Serve on its own as a starter or with 2 slices of wholemeal
toast as a main meal
