Recipe - Baked Cod with Tomatoes and Peppers
Ingredients
- 4 cod fillets
- 20 cherry tomatoes
- 2 peppers, finely sliced
- 1 onion, finely sliced
- 4 bay leaves
- half a lemon, sliced
Method
Pre heat the oven to 200°C (Gas 6). Take 4 pieces of cooking
foil, place a piece of cod in the centre of each sheet of foil.
Season with a little salt and pepper. Place 5 cherry tomatoes
around the cod fillets and sprinkle the sliced peppers and onions
evenly over the cod. Place a bay leaf and a slice of lemon over
each piece of cod and then wrap the foil around the fish to make a
parcel.
Cook in the oven for around 15 minutes until cooked and serve
with a green salad or green beans.
