Recipe - Jerk Chicken

Jerk ChickenIngredients

  • 1/2 an onion
  • 2 fresh chilli peppers seeded
  • 4 cm piece of fresh root ginger, peeled
  • 1 teaspoon all spice
  • 1 teaspoon ground pepper
  • 1 tablespoon white wine vinegar
  • 1 tablespoon water
  • 6 pieces skinless chicken breast

Method

Put all the ingredients except the chicken in a food processor and blend until smooth.

Place the chicken in a large shallow oven proof dish, pour over the sauce and marinate in the fridge for 2-3 hours.

Pre-heat the oven to 200ºC/Gas mark 6 and bake in the oven for 25-30 minutes until cooked. Serve with shredded lettuce or a small portion of brown rice.
